If you are in the mood for a perfect summer treat—light and tangy, yet with a rich edge that lets you know it means business., this is for you. So easy to make and even easier to eat. The berries are the perfect counterfoil for the richness of the other ingredients and MUST be fresh. Try not to crush them too much when making the batter as they are fabulous as they burst in the mouth with summer freshness. Enjoy

Straight from the oven–the smell!!

This Mascarpone Mixed Berry Cake is so soft and moist, it can be baked and served straight from the pan. You can serve it as a coffee cake for brunch or with a scoop of ice cream for dessert. My perfect way is with lashings of fresh cream.

Can’t wait to cut it
