Straight from the oven–the smell!!


This Mascarpone Mixed Berry Cake is so soft and moist, it can be baked and served straight from the pan. You can serve it as a coffee cake for brunch or with a scoop of ice cream for dessert. My perfect way is with lashings of fresh cream.

Can’t wait to cut it


  • 1 cup all-purpose flour (130 g)
  • 2/3 cup granulated sugar (120 g)
  • 1/2 teaspoon salt (3 g)
  • 1 teaspoon baking powder (5 g, rounded teaspoon)
  • 1 tub (226g) mascarpone cheese @ room temperature
  • 2 large eggs (room temperature)
  • 84 g, melted butter
  • 1 teaspoon orange extract (3 g)
  • 1/4 teaspoon pure vanilla extract
  • ½ (75g) cup fresh blueberry
  • ½ (65g) cup fresh raspberry
  • Can almost taste it!



1.Leave the mascarpone cheese out on the counter to soften for 10-15 minutes. Also leave the eggs out to come to room

  1. Preheat oven to 180°C.
  2. In a small bowl, measure out flour, sugar, salt, and baking powder, mix together thoroughly with a whisk and set
  3. Melt the butter in a microwave safe bowl for 20-30
  4. Brush a 28cm cake tin with some previously melted butter. Let the remaining cool to room
  5. Add mascarpone cheese, egg, the cool butter, orange extract and vanilla extract to a medium mixing bowl and whisk until
  6. Combine the dry ingredients into the wet ingredients with a
  7. Fold in 2/3 of the berries, use light hand so you don’t smash
  8. Pour into prepared pan, sprinkle on the remaining berries
  9. Bake for 45-47 minutes until an inserted toothpick comes out clean
  10. Let cool on a wire rack completely before slicing, add fresh berries on top and a dust lightly with sugar
