Fancy a little something not too sweet but ever so satisfying to go with that special bottle of sweet wine you have been saving for an extended lock down? Can’t believe I actually wrote that. But you get what I mean don’t you. This cake is not too sweet, is made with a kind of pancake batter,with an unusual texture , not like your usual sponge.  It sounds complicated but isn’t. Would go very well with a robust Cabernet Sauvignon as well, but my numero uno choice is a Brut MCC—heaven.

Great on a plate–with a bottle of Kanu Natural Sweet Shiraz
