Even though peaches aren’t in season I just HAD to have a peach dessert of some kind, so my talented chef came up with this one. He used tinned, maybe fresh would have been even better –but who can wait when one MUST have something. It was fabulous!!

Gluten-Free Peach Cobbler

A gluten free peach cobbler that tastes just as delicious as the regular version. I like to make this in the summer with fresh peaches, but you can use frozen or canned. I tried different versions for the topping, and this recipe is the best.

Peaches:

If you are using canned peaches 2 cans will be enough and all you need is to top with the nutmeg before covering with the topping.

Follow this if using fresh peaches

Mix together

  • 4 cups chopped fresh peaches
  • 2 tablespoons white sugar
  • 2 tablespoons gluten-free all-purpose baking flour
  • ½ teaspoon ground nutmeg

Top with

  • ¼ cup unsalted butter, cut into small pieces

Topped with blueberries

Topping:

  • 1 cup gluten-free all-purpose baking flour (normal flour will work also)
  • ¾ cup white sugar
  • ¾ cup whole milk
  • 1 teaspoon gluten-free baking powder – normal baking powder is fine
  • 1 teaspoon xanthan gum – omit if using normal flour
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon

Directions

  1. Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).
  2. Layer peaches in casserole dish or baking tray and sprinkle over nutmeg
  3. Dab butter pieces over top (I omit this if using canned peaches)
  4. To make the topping: Mix flour (sift in flour), sugar, milk, baking powder, xanthan gum (if using), and salt and cinnamon together in a bowl. Sprinkle over peaches in the baking dish.
  5. Bake in the preheated oven until fruit is bubbly and the top is golden brown, about 45 minutes.
  6. Let cobbler cool before serving. With cream naturally.
  7. Equally delicious the next day—if there is one—with cream of course
