Nature’s bounty

A gulet is a Turkish sailing vessel often seen along the coast off Bodrum. A gilet is a sleeveless jacket usually worn over an outfit to provide extra warmth, and a galette is a freeform or flat round crusty cake baked open in a hot oven.Today we are talking Galette. The filling can often be with egg and ham , maybe cheese and tomatoes and the pastry is often made with buckwheat flour, especailly in Normandy. Of course fruit in season is fabulous done this way–think apples, pears, peaches, or , as we have done, luscious strawberries. The almonds are essential to avoid soggy pastry.  Easy as pie to make –so have fun.
