
Nature’s bounty
A gulet is a Turkish sailing vessel often seen along the coast off Bodrum. A gilet is a sleeveless jacket usually worn over an outfit to provide extra warmth, and a galette is a freeform or flat round crusty cake baked open in a hot oven.Today we are talking Galette. The filling can often be with egg and ham , maybe cheese and tomatoes and the pastry is often made with buckwheat flour, especailly in Normandy. Of course fruit in season is fabulous done this way–think apples, pears, peaches, or , as we have done, luscious strawberries.The almonds are essential to avoid soggy pastry. Easy as pie to make –so have fun.

STRAWBERRY GALETTE
Ingredients
- 500 gm strawberries
- 4 tbsp sugar , divided into 2
- 2 tbsp cornstarch
- 1 sheet pre-rolled puff pastry
- 1/4 cup sliced almonds , toasted
- 1 tbsp cream
- strawberry jam , to glaze
Instructions
- HULL and quarter strawberries. Toss with 2 tbsp each sugar and cornstarch in a medium bowl.
- LAY a pre-rolled sheet of puff pastry on a parchment-lined baking sheet. Sprinkle almonds in centre of pastry, leaving a 2-in. border. Sprinkle remaining 2 tbsp sugar over almonds. Top with strawberry mixture.
- FOLD border up over strawberries. Brush crust with cream. Bake at 200c in bottom third of oven until crust is golden, 40 to 45 min.
- REMOVE from oven and brush strawberry jam over strawberries. Serve warm.
- SERVE with some fresh strawberries which add immeasurably to the flavour with some juicy crunch
